Crab & Tamarind Curry

This lip smacking recipe was handed down from my Grandmother, to my Father, to me, and is one for those who don’t mind getting messy! So put a napkin on, or eat it naked and get stuck in!
Ingredients
- 1 large mangrove crab, cleaned portioned
- 1 red onion chopped
- 4 green chilies, chopped
- 1 large bulb ginger, grated
- 4 cloves crushed garlic
- 4 tsp. curry powder
- 1 bunch fresh dhania (coriander)
- 200ml tamarind juice
- 4tsp brown sugar
- seasoning
- 2 tins chopped tomatoes
- corn oil for cooking
Instructions
- In a large saucepan add the cooking oil and heat.
- Fry the curry powder in the hot oil for 1 min, till it starts to release its aroma.
- Add the chilies, onions, garlic and ginger and fry till they start to brown
- Add the chopped tomatoes and tamarind juice and cook till a nice sauce has formed.
- Add the crab and cook for 20 mins with the lid on
- Remove the lid and cook for a further 5 mins.
- Add the sugar
- Just before serving add the chopped dhania and serve with chapattis
