Flash Seared Masala Prawns & Fulkas

A delicious, and quick recipe that packs loads of flavour. A great starter to any spicy meal!!
Ingredients
- Ingredients for the Fulkas (Indian Flat Breads)
- 3 cups of whole meal flour
- 4 tbsp of curry powder mix (Blended turmeric, coriander cumin, and chilli powder)
- 1 Tsp salt
- 4 Tbsp of corn oil
- 0.5 liter fresh coconut sap (can be substituted with 2 tsp of fresh yeast dissolved in 0.5 liter light coconut milk)
- Ingredients for the pesto & prawns
- 350g cleaned large tiger prawns
- 1 bunch Fenugreek
- 200g Macadamia nuts
- 2 tsp White pepper
- 2 tsp Black pepper
- 2 tsp Paprika
- 2 tsp crushed Coriander seeds
- 1 tsp Turmeric
- 2 tbsp crushed Ginger
- 2 tbsp crushed Garlic
- 2 tsp fresh crushed Green chilies
- 200ml Oil
- Juice of 2 Lemons
- 1 bunch Fresh coriander
Instructions
- Clean the prawns and set aside.
- In a bowl add 3 cups of whole meal flour, 4 tablespoons of curry powder mix, salt and a tablespoon of oil. Add enough coconut sap into the flour mixture and knead it to have consistent bread dough. Set aside to proof.
- Roll the dough into little balls. Dust the board with flour and using a rolling pin roll out the dough into a disk shaped flat bread about the size of your palm.
- Heat a good amount of oil in a pan, when it is hot enough slide the disk bread into the oil and deep fry.
- As it comes to the surface knock it on the head. (This makes the bread puff up) Then set them aside.
- Heat a dry pan and add a tablespoon of white pepper, black pepper and the red pepper. Dry toast them till you start to get an aroma.
- To make the pesto use a pestle and mortar to pound the toasted black pepper seeds, macadamia nuts, turmeric, some green chili’s, garlic cloves and Fenugreek leaves.
- Add 6 tablespoons of oil into the pounded pesto.
- Add the pesto to the prawns and some lemon juice then work it through and set aside for half an hour to marinade.
- Heat a dry pan till very hot and sear the marinated prawns in it. Let them cook for about 4-5minutes till beautifully caramelized.
- Add freshly chopped coriander and a squeeze of lemon and it’s ready!
