This lip smacking recipe was handed down from my Grandmother, to my Father, to me, and is one for those who don’t mind getting messy! So put a napkin on, or eat it naked and get stuck in!

Ingredients
1 large mangrove crab, cleaned portioned
1 red onion chopped
4 green chilies, chopped
1 large bulb ginger, grated
4 cloves crushed garlic
4 tsp. curry powder
1 bunch fresh dhania (coriander)
200ml tamarind juice
4tsp brown sugar
seasoning
2 tins chopped tomatoes
corn oil for cooking
Instructions
In a large saucepan add the cooking oil and heat.
Fry the curry powder in the hot oil for 1 min, till it starts to release its aroma.
Add the chilies, onions, garlic and ginger and fry till they start to brown
Add the chopped tomatoes and tamarind juice and cook till a nice sauce has formed.
Add the crab and cook for 20 mins with the lid on
Remove the lid and cook for a further 5 mins.
Add the sugar
Just before serving add the chopped dhania and serve with chapattis
